Super Seed Snaps
These high protein crackers packs some serious flavour. And none of the carbs. Lesley Stowe and Mary’s Crackers – eat your heart out. The only problem is that these wee discs of protein heaven are so yum, they might be a little addictive. Try sticking to only 2 snaps. I dare ya. Makes approx 36 snaps.
Dry’s
1 cup almond flour
1/4 cup whole flax seeds
1/4 cup raw sunflower seeds
1/4 cup pumpkin seeds
1/4 sesame seeds
1/2 cup grated fresh parmesan
Beat together
2 egg whites
2 tbsp Tamari Sauce
Instructions
Preheat oven 375 degrees. Put some great tunes on. Do a little dance.
In a bowl, mix all the dry ingredients.
Blend in egg white/tamari mixture until well mixed and is forming a dough-like consistency.
Using a small spoon, scoop and form a ball with your hands (you gotta get messy with this one) and place balls evenly on a parchment papered baking sheet. With a glass and a square of parchment paper, press each wee ball down to form a thin cracker. If the balls are too big, you end up with wheel sized crackers.
Bake @ 375 degrees or until golden brown.
Do another little dance.
*Note: seeds can be switched out in different combos for your other favourite seeds – like Chia!
